Twenty to twenty-four drumsticksOne-half cup of flourTwo and one-half teaspoons of saltOne-half teaspoon of pepperTwo teaspoons of paprikaOne teaspoon of curry powderTwo teaspoons of poultry seasoningsOne-half cup of margarine or butterPlace heavy aluminum foil in two nine-by-thirteen baking dishes, lining them completely. Place one-half of the butter in each, and place them in a 450-degree oven to melt the butter. Using a gallon-size freezer bag, combine all dry ingredients and mix well. Shake about three drumsticks in bag of seasonings until thoroughly coated; then place in the baking dish with the butter. Repeat until all drumsticks are breaded. Bake in a 450-degree oven, uncovered, for about thirty minutes. Turn legs over and continue to cook for another fifteen to twenty minutes, until chicken is thoroughly cooked.Roast Chicken with FennelWhen the weather has turned cold and grilled chicken is not as enjoyable to make as it was a few months before, this low fat baked dish is sure to satisfy. This tasty dish will likely provide no leftovers, but if you are lucky, you will have a delicious leftover drumstick or two for lunch the next day.On large bulb of fennel, about three cups chopped)Five teaspoons of olive oilTwo tablespoons of fresh rosemaryOne tablespoon of fresh lemon zestTwo quartered cloves of garlicOne-half teaspoon of pepperFour skinless drumsticksTwo tablespoons of pine nutsTwo teaspoons of wine vinegar, whiteCombine fennel and two tablespoons of olive oil in nine-by-thirteen pan and bake in a 450-degree oven for ten minutes.While fennel is baking, mince rosemary, zest, and garlic, along with the salt and pepper, until you have created a paste. Place in a bowl and stir in one tablespoon of olive oil; rub the mixture over the drumsticks until coated. When the fennel is done roasting, add pine nuts and chicken. Bake about fifteen to twenty minutes. You will know your chicken is done when you insert a meat thermometer into the meatiest part of the drumstick and it registers 165 degrees. Remove from the oven, and toss the fennel from the pan, along with any scrapings, with the vinegar and pour over the chicken.Simple Chicken DrumsticksThis is a great dish because many of us have these ingredients in our kitchens all the time.
